I can’t say enough good things about this seriously delicious classic. Since you don’t have to keep anything hot, it’s perfect for lunch with friends or just a tasty weeknight dinner, not to mention it makes for great leftovers.  You can find tons of variations online, but overall it’s a pretty straight-forward recipe. That being said, this is how I chose to prepare my version and it did not disappoint.  I will warn that the prep time is a little lengthier than you’d think, but I promise it’s worth it!

This little experiment turned out to be a seriously pleasant surprise!  Keeping with the theme of my last post, I needed a way to use the other half of my apple and blue cheese so I decided to throw it in a chicken burger.  Luckily, we ended up with another great weeknight meal, these burgers were perfect coupled with baked sweet potato fries w/herbs, chili powder and roasted garlic.  I’m always looking for healthier alternatives to some of our guilty pleasures, and this one was certainly a flavorful, satisfying alternative to your classic beef burger. I love apple season! The grocery store is filled with apples this time of year, the aromas, the colors, it’s enough to make a foodie feel like a kid in a candy store.  I always like to take full advantage of produce that’s in season, so I’m doing my best to use apples in both sweet and savory dishes these days.  Apples and blue cheese are the perfect combination. So when I was in need of a quick weeknight meal, I thought this salad would be the perfect solution, and it was.

If you haven’t heard about the drought in Texas, you must have been living under a rock!  It has been so hot, even for Texas, and for far too many days.  Until the day of rain we saw last weekend, we really hadn’t had a good rain since last September, and just light rain maybe twice since! Now, things are starting to cool off and we welcome it with open arms.  With highs in the mid-upper 80′s, it feels like heaven compared to what we’ve had for months.  With this change of season comes new ingredients in the kitchen and nothing says Fall like pumpkin.  I hope you enjoy these as much as I did, they are perfect with coffee for breakfast or to just nibble on all week long. ;)
